My Happy Meal - Chicken Drumsticks

Drumsticks are always fun to eat. It doesn’t have to be unhealthily deep-fried to taste good. Bake it and eat an even more delicious version! 


Ingredients: 

  • 12 chicken drumsticks (2 1/2 to 3 pounds total)
  • 1/2 cup Dijon mustard
  • 3/4 cup panko (Japanese bread crumbs)
  • 3/4 cup grated Parmigiano-Reggiano (1 1/2 ounces)
  • 3/4 teaspoon cayenne
  • 3 tablespoons unsalted butter, melted

    Recipe:

    1. Preheat oven to 450F with rack in upper third.
    2. Pat Chicken dry and toss with mustard until evenly coated..
    3. Stir together panko, cheese, cayenne, 1/2 tsp each of salt and pepper (for a slightly spiced up version, add some red pepper flakes too). Drizzle with butter and toss.
    4. Dredge each drumstick in mixture to coat, and arrange in large buttered sheet pan. Roast until chicken is cooked through (about 30 mins). Microwave on high for 3 minutes if the inside is still slightly pink, or check internal temp to ensure it reaches 180F.
